1 pound okra pods
2 tbsp extra virgin olive oil
1 tsp chopped onion powder
Salt & black pepper according to taste
- Preheat oven to 450F. Lightly oil a cookie sheet or roasting pan.
- Trim the ends of okra and slit them into two pieces. Combine the okra, salt, black pepper, onion powder and oil in a large bowl and toss to coat well. Arrange in a single layer in the pan or sheet.
- Roast for about 15 minutes, until the pods are well browned, shaking the pan occasionally for even cooking.
- Transfer the okra to a serving bowl. Serve immediately.
