Pink Pancakes

My kids love sweet pancakes. So, I keep trying to make pancakes with added nutrition and flavors. I decided that this time I will change color of the pancakes. When my son saw the pancakes, his reaction was - "pink pancakes?? What??" When they ate it, they liked the pancakes. When I asked my younger one - "What color pancakes you want next time?" He said - "Blue!!"
 
Pink Pancake (Beetroot Pancake)
 
Ingredients:
 
1 cup Brown Rice Flour
1 Egg
1/4 cup Beetroot Puree (See Notes Below)
1 tsp Flaxseed Meal
1 cup Almond Milk
1 tbsp Honey
 
Method: 
  1. In one medium sized bowl, beat the egg. Mix beetroot puree and milk in it.
  2. Add rice flour, flaxseed meal and honey to the mix and make it a smooth batter.
  3. Add more milk or more rice flour to make batter thick enough to make pancakes. Put the batter aside for 15 minutes.
  4. Heat the non-stick pan and spread pancake batter on the pan. Put a little oil and cook the pancake both sides.
  5. Serve hot with honey or jam.
Notes - To make beetroot puree, I chopped beetroot in very small pieces and steamed it for 10 minutes. When it is soft, I blend all pieces in blender to make puree.

Broccoli Spinach Soup

Hot soups keep you warm in this winter season, so I keep experimenting on different combinations of soups. Recently I tried broccoli and spinach soup. It was so tasty that I made it 3 times in 2 weeks. It was so filling that we didn't need to eat anything with the soup. This soup has become one of my favorite soups.
 
Broccoli Spinach Soup
 
Ingredients:
 
2 cup finely cut Broccoli florets
1 Red / Yellow finely cut Onion
2 cup finely chopped Spinach
1/4 cup Coconut Milk
Water as required
Salt & pepper according to taste
1 tsp Oil
 
Method:
  1. Heat the oil in the pan and saute the onion in the oil till it is softened. 
  2. Add broccoli and spinach Into it and saute it for 3 minutes. 
  3. Add one cup of water and let it boil for 3-4 minutes or till broccoli is softened. Remove the pan from the heat and let it cool down. 
  4. Put the mixture in the blender and blend it till it gets smooth consistency and a little thin paste. It's good if you leave some crunchy pieces unblended.
  5. Pour the blended mixture into the cooking pot and add water if needed. Boil it for 10 minutes at least. 
  6. Add coconut milk into it. Also add salt and black pepper according to taste. Boil it for another 5 minutes. 
  7. Serve it hot.
This soup was so yummy that I am sure that this can be part of the party menu plan and guests will ask for more.

Birds are chirping

Two days before, when we see outside form our balcony, we see only the cars in the parking lot and 1-2 people with heavily dressed in jackets, hoods and shoes. There was no noise outside there on the roads and nearby. We just hear noise of trains, cars, school buses and planes. In the winter, we keep all the windows closed, so these noises were also less. The trees had no leaves.

It was so much cold. So, we had to think before going outside for anything. Kids couldn't go to play outside. Either they have to play indoor, watch TV, play Wii or play video games. Most of the time they are busy with studies or electronic gadgets (iPad, iPod, iPhone, Wii, Computer, Video Games etc.). To keep them busy in constructive activities is also a big task.

Since two days, weather is improved. Temperature is increased and summer has started. Suddenly the people started to come out on the roads. The kids have come out to play with their parents or friends. Everywhere, we can see the people on the roads talking, chatting and laughing. Kids are also making noises. Mothers have come with their babies in the strollers and are walking. Yesterday night, when usually there was calm always, the people were walking in the groups and chatting to each other.

Because of hot weather, we kept our windows open. Today morning, I heard noise of birds chirping. I felt so nice. It seems that someone is playing music in my ears. I sat in my balcony with one cup of tea and one book. Still, there was some chill in the morning but bearable with one light sweater. The birds were happy and were playing together. Some birds were taking the foods to their nests. They were very active in the morning.

Trees are also green, leaves have come there on the trees. Grass has become green. The people are going to their offices lightly dressed in sweaters. Kids are going to school. The cats are also running here & there in search of food. Drinking tea, watching outside in the nature and reading the book is a very great experience. I really love it.

Hidden Greens

Hara Meetha Cheela (Green Pancake)

Ingredients:
1/4 cup Brown Rice Flour
1/4 cup Moong Daal Flour
1/4 cup Green Veg Puree
1/4 cup Milk (Any dairy free milk)
1-1/2 tbsp Sugar
1 large Egg
1/2 tsp Vanilla
1/2 tsp Oil

Method:
  1. Mix all the ingredients except oil till smooth batter. Add some water if needed.
  2. Heat the tawa and place 1 spoon batter on tawa & spread it like dosa. Use oil to cook it.
  3. Cook it until both sides are brown.
  4. Serve warm with any jam, jelly or syrup. Makes 4 pancakes.
Note: You can use any green vegetables - collared greens, kale, cabbage, spinach, etc.

Collard Greens are packed with nutrition. It has anti-cancer properties. They offer an excellent source of vitamins B6 and C, carotenes, chlorophyll, and manganese. One cup of collard greens provides more than 70 percent of the RDA for Vitamin C. Collard Greens are also a very good source of fiber, and several minerals, including iron, copper, and calcium. They also offer a good source of vitamins B1, B2, and E.

Beans Parantha

Here is the recipe for beans parantha (indian flat bread stuffed with beans). This recipe is adapted from my other blog - GFCF Rasoi.


Beans Parantha



Ingredients:


1 cup Sorghum Flour
3/4 cup Cooked Beans
1 tbsp Garlic-Ginger-Onion paste
1 tsp dry Mango Powder
Salt for taste
1 tsp oil for cooking


Method:

  1. Mix all the ingredients except oil. Knead the dough until it is smooth. Add some water if needed.
  2. Divide the dough into 4 balls.
  3. Take one ball and place the ball into 2 plastic sheets. Roll it by rolling pin like chapati.
  4. Heat the tawa and cook it until both sides are brown.
  5. Serve warm with any curry, pickle or curd.
Note: You can use any dry beans (chickpea, kidney beans, black beans, etc...), I used black eyed peas (Lobia). To cook, first you need to soak the beans for about 8 hours. Then cook the beans in the cooker or pan as you cook normally. For saving the nutrients, use the same water you have soaked the beans in. After cooking, strain the extra water and use beans for making dough. You can mash the beans or blend them in the blender. If needed, you can use same water for adding in dough.

Black-eyed peas (Lobia) are an excellent source of calcium (211 mg in a 1 cup serving), folate (209mcg), and vitamin A (1,305 IU), among other nutrients.
